Friday night, I was looking for something to munch on while watching a movie at home. I didn’t feel like a salad or something completely healthy. I had some leftover peanut dressing from the Peanut Soba Noodles I had made earlier in the week, so I decided to lightly fry some strips of firm organic tofu, and quickly steam some asparagus spears. Crispy tofu and crunchy asparagus, dipped in a light peanut sauce was the perfect little Friday-night snack.
